This One Lesson Changed How I Cook Forever 👩‍🍳⏲️

Salt, Hands, and a Japanese Potato Salad

Hello Reader, It's Yukari!

Salt and your hands can change everything you cook.

(Stick around for Aric’s 1-minute chef’s tip!👨🏻‍🍳)

But first, I want to take you back to a little Japanese kitchen, where I learned the real magic of cooking…

“The Potato Salad That Changed My Perspective”

I visited Terumi and enjoyed her warm "Omotenashi" until I moved to the US.

One evening, she made classic Japanese potato salad.

I kept asking for more, and she’d laugh,

"You’re so silly to love something so simple!"

Her smile stuck with me. I wanted to be like her.

Someone who made others happy with simple things.

She became like a big sister to me.

When I asked for the recipe, she’d say,

"Let’s make it together!"

Something I’d never heard from my mom, or even my grandma.

But Terumi's lessons and our conversations were always like this.

"How much mayo do you add?"

"Oh, I don't know, until it all mixes well."

Her recipe only made sense if you watched her. Everything was in her head, learned by doing.

Every time I visited her, I'd ask, "I made the potato salad, but it wasn't like yours. What did I do wrong?"

Her response was usually something like this. "Oh, I don't know, maybe you didn't cook the potatoes long enough?"

Those potato salad talks were more than cooking.

They were lessons in joy, patience, love, and the beauty of repetition.

My journey to perfect that salad continues, but it wasn’t a smooth highway.

That part is coming next time. 🧡

Who showed you how to cook? Did the person have recipes written down, or was the person more like my friend, Terumi?

💌 Hit reply and tell me! Who first taught you how to cook?

I love to hear your stories! Really!

👨🏻‍🍳 Chef's Tip from Aric (1-minute win): Ditch the shaker. Use a salt dish.

A pinch from a small dish gives you control you’ll never get from a shaker.

Even coverage from above, faster adjustments while cooking, and the right crystals (kosher for cooking, flake for finishing).

Your hands are amazing. The more you do it, the more you remember the right amount of salt to use.

Calibrate once (see what your 3-finger pinch measures), then you can season by feel like a pro. 👨🏻‍🍳

No more measuring spoon. Less washing. 😎
