Too Hot to Cook? Try This Cool Dinner Prep Trick!

Hello Reader, It's Yukari!
We’re deep into grilling season here, and when it’s hot? We skip full meal prep and go for easy food prep instead. ☀️🍴

But before we dig in... a quick (re)introduction!

👋 Quick Re-Intro (In Case You’re New Here!)

Hi, I'm Yukari!

A self-taught, forever student and home cook living with a professionally trained chef (my husband, Aric!).

Before we started U & I Personal Chef Services here in Colorado, I spent over nine years running my business as a dog trainer. 🐾

So no, I’m not a “perfect” cook! I’ve burned steaks, forgotten what’s in the fridge, and definitely wing it on most weeknights.

But these days, I’m all about cooking smarter, not fancier, and I want to bring you with me.

This is what The Kitchen Table is all about. Soulful, budget-friendly cooking, and delicious meals on the table with no judgment and all about support.

Just real life, real meals, and absolute joy.

(Now you know why my photos and videos on our social media aren’t always polished because I shoot them on the go, as one of us cooks and talks at our dinner table. There is no filming production day! 🤣)

If you’re a home cook figuring it out like me, you’re in the right place.

Welcome to the Kitchen Table. ❤️

🥗 What’s in Our Fridge This Week?

Last weekend, we did a simple early-morning food prep session and built these five meals from it. No sweat, literally:

  1. Reimen (Japanese cold noodles) with grilled pork, corn, tomatoes & roasted peppers
  2. Shrimp Quesadillas with cheddar, roasted peppers, onion & salsa verde
  3. Chicken Rice Bowl with blanched broccoli, cauliflower, corn & hoisin
  4. Italian Chicken Salad with red onion, cucumber, olives, and homemade vinaigrette
  5. Pork Fajitas with squash, grilled corn, avocado, salsa verde & cilantro

⚡ Everything was already prepped. We just assembled and ate. It took minutes.

🎨 Vote on Our Logo Color!

We’re working on the official logo for The Kitchen Table, and we need your help!

We're thinking something warm, welcoming, fun, and with a pop of orange (inspired by our ginger cat, Ka-En the Sous Chef, of course.🧡 )

Here are the three palettes. Which one feels like your kitchen table?

🧂 Quick Chef Tip of the Week

🍋 Finish with Acid, Not Just Salt

Grilled or roasted veggies tasting a little flat?

Add a splash of lemon juice or vinegar at the end. It brightens everything up, especially in summer dishes like pasta salads, wraps, or cold noodles. 🙌

We’ll share more tips like this soon, including one that might change how you prep your whole week…

The Classic Japanese Potato Salad with ham, cucumber, onion, and boiled eggs

Salt, Hands, and a Japanese Potato Salad Hello Reader, It's Yukari! Salt and your hands can change everything you cook.(Stick around for Aric’s 1-minute chef’s tip!👨🏻🍳) But first, I want to take you back to a little Japanese kitchen, where I learned the real magic of cooking… “The Potato Salad That Changed My Perspective” I visited Terumi and enjoyed her warm "Omotenashi" until I moved to the US. I still call it "Terumi's Potato Salad" 💖 One evening, she made classic Japanese potato salad. I...

One Spoon, Big Change Hello Reader, It's Yukari! Today I’m thinking about the tiniest tool in the kitchen... a spoon, and how one taste can change everything you cook and share. It’s the thread that ties generosity to good food, the first nudge toward real hospitality. (Stick around for Aric’s chef tip at the end! 👨🏻🍳) But first… come with me to the kitchen where “Taste this” became the lesson I didn’t know I needed. “Taste This” Remember the Chawanmushi incident? That’s how I met Terumi, the...

A Whisper That Changed My Cooking. Plus Our $100 Grocery Challenge. Hello Reader, It's Yukari! Today, I want to rediscover what happened when Aric and I did $100 Grocery Challenge back in January 2025. (Remember? 🤣) Aric and I had fun doing it, and we learned some lessons along the way. I saved many things Aric talked about cooking during the time, and I can't wait to share his wisdom, too. But first... let me take you back to the kitchen that woke me up, kicked me out of bed, and taught me...
